Instructions:

  1. Melt the melting wafers using a double boiler or in the microwave, stirring every 15 seconds until combined and smooth.
  2. Place a wooden skewer into each pineapple wedge. Blot the juices with a paper towel and transfer to a parchment-lined baking sheet.
  3. Dip pineapple into melted chocolate coating. Return to parchment-lined baking sheet, then sprinkle with coconut. Repeat, with remaining pineapple.
  4. Store finished pineapple pops in the refrigerator until ready to serve.
