Bake Believe’s Keto Friendly Red, White, and Blue Brownie Bites

For the Brownie Bites
  • 1 cup Bake Believe® Dark Chocolate Baking Chips
  • 10 tablespoons unsalted butter
  • 3 eggs, beaten
  • ½ teaspoon vanilla
  • ½ tablespoon instant coffee
  • ½ cup almond flour
  • ¼ cup cocoa powder
  • ½ cup Swerve
  • ½ teaspoon baking powder
For the Garnish
  • 1 cup heavy cream
  • 2 tablespoons confectioners Swerve
  • ½ teaspoon vanilla
  • 1 cup fresh strawberries, sliced
  • ½ cup fresh blueberries


  1. Preheat the oven to 350°F. Butter a mini muffin pan.
  2. Place the 1 cup dark chips and 10 tablespoons butter in a heat-proof bowl and microwave in 30 second intervals, stirring in between, until melted.
  3. Place the eggs, vanilla, instant coffee in a large bowl and whisk together until the instant coffee has dissolved.
  4. Pour in the melted semi-sweet mixture and whisk, once more, to combine.
  5. Sift the almond flour, cocoa powder, Swerve, and baking powder into the wet mixture.
  6. Stir until combined.
  7. Evenly distribute the brownie mixture in the mini muffin pan to make 20 brownie bites.
  8. Bake until the middle of the brownie bites just begins to rise, about 9 minutes.
  9. Allow to cool for 10 minutes, then remove the brownie bites from the pan and place on a cooling rack until they are room temperature.
  10. Place the 1 cup heavy cream, confectioners Swerve, and ½ teaspoon vanilla in a large chilled bowl and beat with an electric mixer until you achieve stiff peaks.
  11. Top each cooled brownie bite with a small amount of whipped cream, sliced strawberries, and blueberries.
