Peanut Butter Mousse Cups

For the chocolate cups

For the mousse

  • 1 cup heavy cream
  • ¾ cup peanut butter
  • 1 tablespoon honey
  • 1 teaspoon vanilla
  • 1 (8-ounce) carton of cream cheese

 Special equipment: silicone mini muffin pans


  1. Melt the chocolate chips using a double boiler or in a microwave on low power, stirring every 30 seconds until melted and smooth.
  2. Transfer 2 teaspoons of melted chocolate into each of the silicone mini muffin cavities. Using a small spoon, spread chocolate throughout the bottom and up the sides to fully coat. Transfer to refrigerator while preparing the mousse.
  3. Whip the heavy cream to medium peaks and set aside. In a separate bowl, beat cream cheese, peanut butter, honey and vanilla on medium speed until combined and smooth, about 2 to 3 minutes.
  4. Fold whipped cream into mixture into peanut butter mixture, 1/3 a at time. Continue folding until fully incorporated and smooth.
  5. Pipe or spoon mousse into chocolate cups. Return to refrigerator for at 30 minutes or until ready to serve. Gently push bottom of silicone molds to remove chocolate filled cups.
