Bake Believe’s Paleo & Keto Friendly Chocolate-Gingerbread Latte

- 2 tablespoons Bake Believe® Semi-Sweet Baking Chips
- 2 ounces espresso or strongly brewed coffee
- 1 ½ cups coconut milk, divided
- 1 teaspoon ground cinnamon
- ½ teaspoon allspice
- ½ teaspoon ground ginger
- ¼ teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- 1 pod star anise
- 1 tablespoon MCT oil
- Divide espresso between two mugs. Set aside.
- In a small pot, heat coconut milk, cinnamon, all spice, ground ginger, nutmeg, cloves, and star anise over medium heat for 3-4 minutes, until steaming.
- Add semi-sweet baking chips and stir 1 minute to melt.
- Remove star anise and discard.
- Transfer mixture to a blender with MCT oil. Process 1 minute, until foamy. Pour warm coconut milk mixture over espresso.
- Garnish with additional spices if desired. Enjoy.
