Bake Believe’s Paleo & Keto Friendly Chocolate-Gingerbread Latte

  • 2 tablespoons Bake Believe® Semi-Sweet Baking Chips
  • 2 ounces espresso or strongly brewed coffee
  • 1 ½ cups coconut milk, divided
  • 1 teaspoon ground cinnamon
  • ½ teaspoon allspice
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • â…› teaspoon ground cloves
  • 1 pod star anise
  • 1 tablespoon MCT oil


  1. Divide espresso between two mugs. Set aside.
  2. In a small pot, heat coconut milk, cinnamon, all spice, ground ginger, nutmeg, cloves, and star anise over medium heat for 3-4 minutes, until steaming.
  3. Add semi-sweet baking chips and stir 1 minute to melt.
  4. Remove star anise and discard.
  5. Transfer mixture to a blender with MCT oil. Process 1 minute, until foamy. Pour warm coconut milk mixture over espresso.
  6. Garnish with additional spices if desired. Enjoy.
