Low Carb Turtles

Yield: 14 turtles

For the Caramel:

  • ¾ cup heavy cream
  • ⅓ cup allulose
  • 1 tablespoon unsalted butter
  • ½ teaspoon vanilla
  • Heavy pinch of salt

To Finish the Turtles:


  1. In a medium saucepan, combine all of the ingredients for the caramel.
  2. Place over high heat and bring to a boil.
  3. Reduce the heat to medium-high.  Cook, stirring occasionally, until caramelized, about 11 minutes.
  4. While the caramel is cooking, arrange the pecans on a parchment-lined cookie sheet.
  5. Place them so that the ends are touching together in a flower-like design.
  6. After the caramel is done cooking, allow to cool for 3 minutes, stirring occasionally.
  7. Spoon the caramel mixture into the center of each group of pecans, using 1 teaspoon of caramel for each.
  8. If the caramel is spreading too much, allow to cool a few minutes longer.
  9. Place the cookie sheet in the refrigerator to allow the caramel to set up, about 15 minutes.
  10. Meanwhile, place the ⅓ cup milk chips in a medium heat-proof bowl.
  11. Microwave in 10-second intervals, stirring in between until almost melted.  Continue stirring until the chips are just melted.
  12. Spoon 1 teaspoon of melted milk chips on top of the caramel.
  13. Sprinkle the chocolate with coarse salt and place in the refrigerator for another 15 minutes.
  14. Enjoy right away or store in an airtight container in the refrigerator for up to 1 week.
