Keto No-Bake Cookies

- 3 ounces Bake Believe® Semi-Sweet Baking Bar, roughly chopped
- 2 tablespoons unsalted butter, sliced
- ¼ cup unsweetened creamy peanut butter
- 2 tablespoons Swerve
- ¼ teaspoon vanilla
- â…› teaspoon salt
- 1 cup unsweetened finely shredded coconut, like Bob™s Red Mill
- Line a cookie sheet with parchment paper.
- Place the semi-sweet chips, butter, and peanut butter in a large heat-proof bowl and microwave in 30-second intervals, stirring in between, until melted.
- Stir in the Swerve, vanilla, and salt.
- Add the shredded coconut and stir until well combined.
- Spoon the mixture onto the prepared cookie sheet, making 10 mounds.
- Place the cookies in the refrigerator until they have fully set, about 15 minutes.
