- 1 tablespoon butter, melted
- 1 tablespoon coconut flour
- 1 tablespoon monk fruit sweetener
- ½ teaspoon baking powder
- 1 egg
- ¼ teaspoon pure lemon extract
- ½ teaspoon poppy seeds
- In a coffee mug, combine melted butter, coconut flour, monk fruit, baking powder, and egg, lemon extract, and poppy seeds. Whisk to combine. Add 1 tablespoon white baking chips and mix to combine.
- Microwave on high for 60-70 seconds, until set.
- Sprinkle with remaining white chips and enjoy.
