Fudgy Brownie Balls

Fudgy Brownie Balls

Ingredients:

  • 1 cup Bake Believe® Chocolate Melting Wafers
  • ½ cup walnuts
  • 1 ½ tablespoons Swerve
  • 2 tablespoons cocoa powder
  • 2 tablespoons unsweetened almond butter
  • ½ tablespoon coconut oil
  • Heavy pinch of salt

Instructions:

  1. Add the walnuts and Swerve to a food processor.
  2. Process until the walnuts are finely chopped.
  3. Set about ½ tablespoon of chopped walnuts aside for garnish.
  4. Add the cocoa powder, almond butter, coconut oil, and salt.
  5. Blend until all of the ingredients come together into a ball in the food processor.
  6. Divide into 9 even portions, then roll into balls.
  7. Place the balls on a parchment-lined cookie sheet and put in the freezer until firm, about 30 minutes.
  8. Place the melting wafers in a small heat-proof bowl and microwave in 10-second intervals, stirring in between, until melted.
  9. Dip the balls, one at a time, into the melted wafers and cover using a fork.
  10. Remove the ball from the melted wafers using the fork and tap to remove the excess.
  11. Scrape the ball from the fork onto the parchment-lined cookie sheet using a toothpick.
  12. Sprinkle the top of the ball with a pinch of chopped walnuts.
  13. Repeat with the remaining brownie balls.
  14. Chill the brownie balls in the refrigerator until hardened, about 10 minutes.
  15. Enjoy right away or store in an airtight container for up to 5 days.
