No Sugar Added, Keto-Friendly Chocolate Chip Waffles

Ingredients:

  • ½ cup Bake Believe® Milk Chocolate Chips
  • ½ cup almond flour
  • ½ cup coconut flour
  • ¼ teaspoon xanthan gum
  • ¼ teaspoon cinnamon
  • 1 teaspoon baking powder
  • 2 eggs, room temperature
  • 1 tablespoon maple syrup
  • ¼ cup unsalted butter, melted
  • 1 cup milk, or milk alternative
  • ½ teaspoon vanilla extract

Instructions:

  1. Combine almond flour, coconut flour, xanthan gum, cinnamon, and baking powder in a large bowl. Whisk together until fully combined. Add the eggs, butter, milk, and vanilla. Stir until batter is formed. Stir in chocolate chips. If batter seems too thick, add additional milk by the tablespoon.
  2. Preheat waffle iron according to manufactures instructions. Spray with nonstick spray, then scoop batter on top. Cook until crisp and golden. Repeat with remaining batter. Serve immediately with butter and maple syrup and enjoy!
