Berry Chip Oatmeal Bars

  • 1 cup 1-to-1 gluten free flour mix
  • 2 ½ cups old fashion oats
  • ¼ cup maple syrup
  • ½ cup butter, melted
  • 1 egg

Instructions:

  1. Preheat Oven to 350F. Line a 9×9-inch baking dish with parchment paper and set aside.
  2. Place berries in a large bowl. Add maple syrup, cornstarch, vanilla and cinnamon. Mix until fully coated, then stir int chocolate chips and set aside.
  3. In a separate bowl, mix gluten-free flour and oats. Add maple syrup, butter and egg. Mix thoroughly until combined. Pour mixture into prepared baking dish and firmly press into the bottom. Sprinkle on chocolate chips, then pour berry mixture on top and spread in an even layer.
  4. Bake for 25 to 30 minutes or until topping is bubbling. Let cool completely, about 1 hour. Then cut into squares and enjoy!
