Dark Chocolate-Banana Chia Seed Pudding

  1. Place one of the bananas in a medium heat-proof bowl and mash very well with a fork until few lumps remain.
  2. Add the dark chips and milk to the banana and microwave in 60-second intervals, whisking in between, until the chocolate has mostly melted and mixed in with the milk.
  3. Whisk in the sweetener, chia seeds, vanilla, and salt.
  4. Cover and chill in the refrigerator for 15 minutes.
  5. Whisk again, then return the covered pudding to the refrigerator until the mixture has fully chilled and the chia has thickened, about 2 hours.
  6. Slice the remaining banana and serve the pudding with the sliced banana on top.
