Almond Chocolate Chip Cookie Bars

  • 1 (9-ounce) bag Bake Believe® Dark Chocolate Chips
  • 1 cup almond flour
  • ½ cup coconut flour
  • ½ teaspoon baking soda
  • ¼ teaspoon xanthum gum
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1/3 cup creamy almond butter
  • ½ cup Swerve granulated sugar replacement
  • ¼ cup maple syrup
  • 1 egg
  • 1 teaspoon vanilla extract
  • ½ cup chopped raw almonds


  1. Preheat oven to 350°F. Line a 9x9x2-inch pan with parchment paper. Set aside.
  2. Combine almond flour, coconut flour, baking soda, xanthum gum and salt in a bowl. Set aside.
  3. Beat the butter, almond butter, Swerve and maple syrup with an electric mixer on medium speed until light and fluffy, about 2 minutes. Beat in egg and vanilla. Scrape down the sides of the bowl then gradually add the flour mixture. Continue mixing until a stiff batter has formed.
  4. Mix in Bake Believe® Dark Chocolate Chips and almonds.
  5. Press mixture into prepared baking pan. Bake for 25-30 minutes or until golden. Remove from oven and transfer to a wire rack to cool completely.
  6. Cut into squares and enjoy! Store in an airtight container.
